La Meli Cake Academy

This three-day course is designed to teach you the principles of assembling and decorating a stacked wedding cake. You will work with a dummy tier as well as a fresh cake of which you will expertly ice in sugar paste. You will then learn how to securely stack a fresh cake with dowels. Finally, we will introduce you to several fundamental design elements for decorating your cake, such as basic piping techniques, simple sugar flowers, and couture lace work. At the end of the module, you will go home with an elegant two-tier wedding cake and the ability to make cakes with any number of tiers.


All students will receive a certificate upon successful completion of the module.
Day 1
 Introduction to sugar paste: colouring, decorating tools & ingredients.
 Making royal icing, recipes & piping bag techniques.
 Icing dummies and board covering.
 Icing & Sandwiching a real cake
 Covering a real cake with plastic icing
 How to support real cakes
 Cutting dowels & Stacking cake tiers
 Making rose buds
Day 2
 Making sugar flowers, blossoms, Daisies, frangipanis, layered flowers
 Using Dusting & colouring techniques
 Making wired full sugar roses
 How to use fresh flowers on a cake
Day 3
 Using Pattern sheets
 Brush embroidery
 Royal icing Piping techniques
 Adding professional decorative elements to a stacked cake
Please note there is no baking in this module
